Are you not using the game client through Steam to use OpenComposite? If that's the case, I don't believe there is any workaround for that. Ultimately in my own opinion DCS is more of a "buy the experience you want to have" platform - which is why as much as I love / hate it I fly the Hornet almost exclusively, because I enjoy carrier ops. Yea, if the Stable version detects that Openbeta is installed, it will ask if you want to pull over all your modules - but those are the only things it will pull over. All your joystick inputs, skins, missions, all that stuff still has to be copied.

The main issue between the Stable and Openbeta versions is that there are several modules - like the AH-64 Apache, for example - that are themselves still in "beta", so they can't be used in the Stable version. The Stable version, as Silk states, only gets updated once they reach a certain milestone...
